- 400g fresh pasta (tagliatelle or fettuccine)
- 100ml heavy cream
- 50g grated parmesan
- 30g fresh truffles
- 50g butter
- Salt and pepper to taste
Instructions:
1. Preparing the truffles: Clean and finely grate the truffles.
2. Cooking the pasta: Cook the fresh pasta in a large saucepan of boiling salted water until al dente. Drain, reserving a little of the cooking water.
3. Preparing the sauce: In a large frying pan, melt the butter and add the crème fraîche. Heat gently without boiling. Add the cooked pasta to the sauce.
4. Adding the truffles: Stir in the grated truffles and parmesan. Toss well to coat the pasta with the sauce. If necessary, add a little of the reserved cooking water to adjust the consistency.
5. Serving: Serve immediately, adding a few slices of fresh truffles on top for an elegant presentation.
